Chicken Fajita Lettuce Wraps

Ingredients

  • 2 chicken breasts sliced
  • 1 tbsp coconut oil
  • 1 avocado sliced
  • 3-5 leaves romaine lettuce
  • 1 red bell pepper sliced in strips
  • 3-4 mushrooms chopped
  • 3 tbsp fresh lime juice
  • 2 cloves garlic chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp ginger
  • 1 tsp paprika
  • 1/2 cup rice white or wild

Instructions

  • Heat coconut oil in a skillet on medium heat
  • Add chicken and cook through, stirring occasionally
  • Add the red bell pepper and mushrooms and cook for 10 minutes, stirring consistently
  • Add garlic, cumin, chili powder, onion powder, paprika, ginger, 2 tbsp lime juice, reduce heat to low & cover for 10 minutes, stirring occasionally
  • RICE - cook according to bag instructions
  • Place cooked rice on lettuce leaf
  • Place chicken, bell pepper & mushrooms on top of rice
  • Drizzle the remaining lime juice over top
  • Garnish with avocado slices & enjoy!

Notes

Replace rice with cauliflower rice for a lower carb option.
