Last Friday was Valentine’s Day, and with that day typically comes a surplus of heart-shaped chocolate love.
Now, I’ll be the first to tell you that a little bit of chocolate once in a while isn’t going to hurt anything, but what if you could “have your chocolate cake and eat it, too” completely guilt-free?
Well, that’s exactly the situation I have for you today – a decadent chocolate pudding recipe you can enjoy completely guilt-free!
Gluten-free.
Grain-free. (are grains in pudding to begin with? 🤔)
Dairy-free.
Natural sugar (aka “Canadian Gold”)
INGREDIENTS – makes 2 servings
:: 2 ripe avocados (have to be quite soft, able to mash)
:: 6 tbsp pure cacao powder
:: 3-6 tbsp organic pure maple syrup (to taste)
:: 1 tsp vanilla extract
PROCESS
Step 1: In a mixing bowl, mash the avocado until smooth
Step 2: Add the cacao powder, maple syrup and vanilla extract and mix well until smooth
Step 3: Put in the fridge for at least 30 minutes to chill
Step 4: Enjoy on it’s own or with some coconut cream whipped cream on top 😋
I know what you’re thinking – “Ewww avocado in pudding?!🤢”
If you’ve never tried this, you’ll just have to trust me that you won’t taste the avocado at all, especially if you use a good amount of cacao powder and maple syrup.
The key is finding avocado’s that are just the right ripeness 👌
