When you’re following our Sustainable Nutrition principles, there are a couple types of food that are very easy to modify to fit into your healthy eating plan.
First you’ve got Asian cuisines like Vietnamese, Thai, Laotian – my favourites.
And another is Mexican cuisine.
With a couple simple modifications, it’s pretty easy to make Mexican meals fit into your nutrition plan. Things like fajitas, burritos, tacos can all be added to your healthy eating plan quite easily.
Today I’ve got an amazingly simple Chicken Fajita Lettuce Wraps recipe for you to try out. Feel free to adjust the amount of rice for your goals and preferences, or replace with cauliflower rice for a lower carb option.

Chicken Fajita Lettuce Wraps
Ingredients
- 2 chicken breasts sliced
- 1 tbsp coconut oil
- 1 avocado sliced
- 3-5 leaves romaine lettuce
- 1 red bell pepper sliced in strips
- 3-4 mushrooms chopped
- 3 tbsp fresh lime juice
- 2 cloves garlic chopped
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp ginger
- 1 tsp paprika
- 1/2 cup rice white or wild
Instructions
- Heat coconut oil in a skillet on medium heat
- Add chicken and cook through, stirring occasionally
- Add the red bell pepper and mushrooms and cook for 10 minutes, stirring consistently
- Add garlic, cumin, chili powder, onion powder, paprika, ginger, 2 tbsp lime juice, reduce heat to low & cover for 10 minutes, stirring occasionally
- RICE – cook according to bag instructions
- Place cooked rice on lettuce leaf
- Place chicken, bell pepper & mushrooms on top of rice
- Drizzle the remaining lime juice over top
- Garnish with avocado slices & enjoy!
